This squidgy, spicy, spreadable sausage akin to Italian nduja has gained something of a cult following. Made with high welfare, heritage-breed pork combined with locally-smoked chillis, dried tomatoes and anchovy oil, it will jazz up a stew, spag bol or even just a piece of toast.
