Tonic water's characteristic bitter taste is from quinine, which comes from the bark of the cinchona tree. Other manufacturers use a solvent extract - quinine hydrochloride/sulphate - but at Bermondsey Mixer Co, cinchona bark is used in its natural form, giving it its beautiful natural amber hue.
Ingredients: Carbonated water, sugar, citric acid, cinchona (natural quinine).
Bermondsey Mixer Co began life at London gin bar Two One Four. Nick Crispini and fellow gin-lover Lawrence Mason found that the overpowering taste of quinine extract, used in most commercial tonics, was smothering the subtle flavours of the gins they were serving. So they set about creating a lighter and crisper natural version.
