The classic British blue cheese, stilton has had Protected Designation of Origin status since 1996. That means it can only be made in Derbyshire, Nottinghamshire and Leicestershire, and producers have to follow traditional recipes that have been around for generations. Cropwell Bishop is, in our opinion, the best!
