This beautiful large, bell-shaped creation is a semi-soft cow's milk cheese, with a dusty rind that encases a silky, creamy texture within. Created in honour of the London 2012 Olympics, it has gone on to win multiple awards including Best Semi-Soft Cheese at the British Cheese Awards. A lovely one for piercing with some herbs, baking whole and then serving with bread and crudités to share.
