Pickled rock samphire was traded extensively in Shakespeare's day, when huge barrels would have been sent into London from Britain's coastal areas. It's great added to tartare sauce, as an accompaniment to fish or as an addition to salads.

Ingredients: rock samphire, cider vinegar, brown unrefined sugar, mustard seeds, ground cloves, turmeric, salt.

Picked in and around Kent by a group of foragers led by Miles Irving, who enjoy sharing the nutritional properties of wild plants and who work with nature to pick what's abundant and in season.
