Jai makes her caramel in small batches, cooking it until it's a deep, nutty conker-colour. This is then folded through the custard with a generous pinch of Maldon sea salt. The result is a super smooth, rich and creamy salted caramel. This one won a Star at the Great Taste Awards 2019!
