"Ethically & sustainably sourced from foothills of the Scottish Highlands. Ours is a delicate Venison salami and blended with a subtle recipe of spices such as ginger, white pepper and black peppercorns & with a little sloe berries added and which results in a very soft gamey flavour.  The salamis are hand produced, then hung and air dried for about six weeks to retain moisture and a subtle texture".

Cobble Lane Cured is an artisan cure-house found on what was presumably once a cobbled back lane near Upper Street. Butchers Adam and Matt make fermented and air-dried products using high-welfare meat from traditional British breeds.
