Ricotta, meaning re-cooked cheese, is a fresh, low-fat, soft cheese.

They make it by heating the organic whey left over from making a hard cheese to 90°C. This results in the soft cheese floating to the surface where they collect it.

This Ricotta has a slightly granular texture with a mild flavour and works well in both sweet and savoury dishes, from cheesecakes to baked pasta.

The High Weald Dairy is on Tremains Farm at Haywards Heath, West Sussex. In the late 1980s Mark Hardy, and his parents Guy and Audrey, established a flock of 150 British Friesland sheep for milking at their small family farm. Mark and his wife Sarah later added dairy cows and goats, and now make a range of artisan organic cheeses.
